The Whitehouse family, third-generation publicans, have owned The Tilbury Hotel for over 16 successful years and although the venue will be renewed, they promise to keep its cherished characteristics intact.

“We wanted to give people a more relaxed experience when visiting the hotel, both in the restaurant and bars, without jeopardising the already simple classic style The Tilbury possesses” says Scott Whitehouse, General Manager of Whitehouse Properties. “I think after these refurbishments, we will have successfully achieved that”

As the hotel undergoes an exciting new look, the menu has also been completely redefined to reflect this, including a new Summer Grill Menu and Wine List. With James Wallis’ background winning Gordon Ramsay’s Best British Restaurant in the TV show ‘Ramsay’s Best Restaurants’, winning 2AA Rosettes and recognition in the UK Michelin Guide, his focus is seasonal, quality Australian ingredients cooked with skill whilst allowing the produce to shine through.

The renovations of the long-standing hotel, in conjunction with the new menu will certainly entice the new crowds, while satisfying loyal customers.
