Greenhouse by Joost: Volume 2!

Joost Bakker's eco-eatery is reborn in Perth's CBD.

Set to recycle the success of Melbourne’s Greenhouse project, multi-disciplinary creative Joost Bakker has shipped his eco-friendly eatery to Western Australia.

Hot on the heels of his eco-conscious Federation Square pop-up space, Perth’s CBD is the next city centre to house Bakker’s innovative urban oasis.

Teaming up with Perth-based restaurateur Paul Aran, and Jason Chan of Seamstress fame, the self-sustaining restaurant is being constructed from entirely recycled and recyclable materials.

With the foundations being shipped in a 40-foot container from the ‘waste wizard’s’ house in Victoria, the project is ditching everyday wastefulness in favour of reinventing the old.

While straw bales make for insulation, tables are constructed from former manhole covers and chairs conceived from steel road signs.

Joost – renowned as the ‘enfant terrible’ of the floral scene – is also lending his horticultural skills to the rooftop kitchen garden, supplying ingredients for the restaurant.

For those who missed the three-month Melbourne edition, head west – Perth’s Greenhouse promises to pop-up and stay up.
